Wild Rice and Butternut Salad with Maple Balsamic Dressing by Amanda Paa

WWOOFer Wild Rice Salad
This is a salad recipe that one of our WWOOFers made, and it is delish. We are delighted to get the recipe from him to share with everyone. Enjoy
2 cups cooked wild rice
1 cup cooked orzo
3 bell peppers
4-5 stalks of celery
3-4 green onions
3/4 cup craisins (I usually go even heavier)
3/4 cup pecans
And then the dressing is about 1 cup with:
1 part olive oil
1 part balsamic vinegar
1 part Sapsucker maple syrup (must be Sapsucker)
The dressing might need to be adjusted, but that’s the general recipe I follow.
