Serve with Cider-Brined Pork Chops and apples

2 tablespoons butter
5 larges leeks, white and pale green parts only, thinly sliced
1 cup whipping cream

Melt butter in heavy large skillet over medium low heat.  Add leeks; saute until tender, about 7 minutes.  Add cream and simmer until slightly thickened, about 3 minutes.  Season to taste with salt and pepper.
